Starting with a shoestring budget and some brave local investors, Filbert’s Bakery is a fantastic independant bakery based in the heart of Lancaster city centre.
Their bread is slow fermented, which gives it a great texture and a deeper flavour. This means they use a greatly reduced amount of yeast in our mixes which allows the gluten to develop naturally over time, this can be very beneficial for people who have had digestive issues with factory produced bread in the past. They don’t use any additives or preservatives, just flour, water and salt, and in some of the breads their wonderful sourdough starters.
